Our Family Meal Plan for this week 09/06/2014 - £47

Our Meal Plan is back this week after a break of several weeks.  We have been sticking to a Meal Plan, I just haven't blogged it.  I've decided to get myself back into gear and regularly blog our Meal Plan.  It's a fairly busy week this week so dinners are deliberately low faff and semi-portable so we can eat before, or on the way to, evening meetings and events.

We have a good supply of salad greens from our allotment but I have included the price of store bought ones for those wanting to follow our Meal Plan.  I normally make our tortillas but again have included the price of store bought ones in the Meal Plan as not everyone makes their own.

Breakfasts will be cereal and milk or toast and spread with a piece of fruit for afters.

Lunches will be Wholemeal Savoury Swirls with crudites, a piece of fruit (or two) and a small baked treat.  We will be having lunch at friends one day on the weekend and I will be taking the pudding, on Sunday we will be eating out for lunch as a Father's Day treat.

Dinners

Portobello Mushroom Burgers, recipe will be blogged on Tuesday

Sticky Glazed Chicken with Homemade Coleslaw and Potato Salad

2 Tblsp honey
1 Tblsp Dijon mustard
3 Tblsp ketchup
2 Tblsp soy Sauce, I use low salt version
1 Tblsp oil
1 kg chicken drumsticks

Mix all the marinade ingredients together.  Slash each drumstick twice then coat in the marinade and set aside for 10 - 15 minutes.  Preheat your oven to 200C/200C Fan and cook the drumsticks for 20 - 25 minutes until cooked through.

Egg and Vegetable Fried Rice

Sausages with Sweetcorn Fritters, Tomato Salsa and Green Salad

125g plain flour, use wholemeal flour if you want
1 free range egg
150ml milk, I use semi skimmed
320g tin sweetcorn, drained

Mix the ingredients until a smooth, thick batter forms.  Season to taste.  Heat a little oil in a frying pan and cook the fritters in batches for about 5 - 7 minutes, turning once, until golden and cooked through.

Quesadillas with Coleslaw and Crudites

Baked Salmon with Potato Wedges and Green Salad

End of the week Frittata with Salads
