Our Family Meal Plan for week of 13th May 2013 - £52

Our Meal Plan for this week is a fairly low faff one as I am away all day on Tuesday and Friday, luckily hubby is working from home those days, and I'm also working 2 nights.  My husband requested a roast this week so we are having roast chicken but making the most of it by getting 3 dinners out of it. I try to buy free range chicken when I can because the quality and flavour is so much better.  Making it stretch to three meals also means we get more value for money.

Breakfasts will be cereal and milk with fruit for afters.  We'll probably have pancakes one morning on the weekend and boiled eggs with soldiers on the other weekend morning.

My daughters will be having school dinners as it will make life easier for all of us this week.  My husband and I will be having dinner leftovers for lunch as usual, except the days when I am away as lunch is provided for me.  Hurrah!

Weekend Lunches will be Pizza Rolls and Twice Baked Potatoes which will fuel our allotment adventures as we are enjoying spending a couple of hours there each day on the weekend.

Despite having a busy week I will be baking our own bread and rolls as usual.  We will also be using greens from our garden to supplement dinners which is fab free, organic food.

As usual I compared the cost of our shopping using My Supermarket.  Our groceries cost £51.65 from Asda on 12th May 2013.  The cost of our items would've been £60.37 from Tesco and £64.77 from Sainsbury's.

Dinners

Roast Chicken with Roast Vegetables, Steamed Greens and Yorkshire Puddings

Chicken and Roast Vegetable Pasties

Leftover roast vegetables
100g other cooked vegetables
300g leftover roast chicken
1 or 2 tsp dried mixed herbs
1 egg, lightly beaten
500g shortcrust pastry, divided into 3 and rolled out into large squares

Preheat oven to 220°C.

Line an oven tray with baking paper.

Roughly mash the roast vegetables, stir through the other cooked vegetables, chicken and egg until combined.  Season with salt and pepper.

Cut 12 squares from the pastry  Spoon vegetable mixture evenly amongst pastry squares.  Fold pastry squares in half to enclose filling.    Crimp with a fork to seal.

Place on the lined tray and bake in oven for 15 – 20 minutes or until golden brown and cooked through.  Remove from oven and set aside to cool slightly before serving.

Chicken Stir Fry with Noodles

Vegetable Quiche and Salad

3 courgettes, grated
1 onion, finely diced
2 large carrots, grated
2 peppers, diced
150g cheddar cheese, grated
75g plain flour
1 tsp dried mixed herbs or 1 Tblsp chopped fresh herbs
4 free range eggs, lightly beaten
salt and pepper

Preheat your oven to 180C.  Grease a ceramic quiche dish with canola spray or line a flan tin (not a loose base tin) with a liner.

Put all the ingredients into a large bowl.  Mix together until well combined.  Pour into quiche dish and level.  Bake for 50-60 minutes until the top is golden and the centre is set.

Homemade Beef Burgers with Sweet Potato Wedges

Vegetable Crumble

1 Tblsp olive oil
1 onion, diced
2 peppers, diced
2 courgettes, sliced
500g tomato pasta sauce
300g can chickpeas, rinsed and drained
2 Tblsp fresh oregano, chopped
1 large aubergine, cut into 1cm thick slices
2 teaspoons olive oil, extra

Crumble
100g rolled oats
75g grated Grana Padano cheese
2 tsp olive oil

Heat the oil in a saucepan and sauté the onion, pepper and courgettes until soft.  Stir through the pasta sauce, chickpeas and oregano. Heat through then pour everything into a large ovenproof casserole dish.

Brush the aubergine with a little oil and grill until golden on both sides.  Arrange over the top of the bean and vegetable mixture.  Sprinkle the crumble over the top.  Bake at 180C for 30 minutes or until the crumble is crisp.


Glazed Salmon with Rice and Vegetables

4 Tblsp honey or golden syrup
4 Tblsp soy sauce
4 Tblsp lemon juice
1 Tblsp Dijon mustard
2 Tblsp water
4 x 200g salmon fillets, deboned

Whisk together the honey, soy sauce, lemon juice, mustard, and water in a small jug.

Put a non-stick frying pan on to a moderately high heat and cook salmon for  2 - 3 minutes on each side, or until just cooked through.  Transfer salmon to serving plates.

Pour the glaze ingredients into the frying pan and cook, stirring constantly, for about a minute until the glaze thickens.  Pour the glaze over the salmon.  Ours will be served with rice and steamed green vegetables.
